Tyramine is a product of tyrosine decarboxylation that occurs during pickling, fermenting, aging and the curing and smoking of foods. Tyramine causes norepinephrine and epinephrine to be released from nerve endings. People taking monoamine oxidase inhibitors are particularly at risk.
